Extended Wine information

Zensa Fiano IGP Salento is a beautifully aromatic organic white wine from the warm, sun-drenched vineyards of southern Puglia, the region forming the heel of Italy’s boot. Produced by Orion Wines under its Zensa label, it captures the distinctive character of the Fiano grape, combining generous Mediterranean fruit with lively acidity and a wonderfully refreshing finish.

The wine is made from 100% Fiano, a traditional southern Italian white grape celebrated for its aromatic complexity, attractive texture and ability to retain freshness in warm growing conditions.

The grapes are sourced from low-yielding, organically cultivated vineyards in Salento, where the Mediterranean climate provides abundant sunshine while coastal breezes help moderate the summer heat. These conditions encourage the development of ripe peach and tropical-fruit flavours without sacrificing the natural acidity that gives the wine its elegant balance.

The vines are approximately 10–15 years old, trained using the spurred-cordon system and planted at a density of around 5,000 vines per hectare.

Harvesting takes place by hand in late August, during the cooler early morning hours, helping preserve the grapes’ delicate aromas and freshness before they reach the winery.

Following careful destemming and gentle pressing, the juice is chilled and allowed to settle before undergoing fermentation in stainless-steel tanks at a controlled temperature. A short period resting on the fine lees adds subtle texture and harmony while preserving the wine’s expressive fruit character.

In the glass, Zensa Fiano displays a bright straw-yellow colour, opening with inviting aromas of peach, mango, citrus blossom and delicate sage. The palate is crisp and beautifully balanced, with ripe tropical fruit, fresh citrus and an appealing rounded texture leading to a long, refreshing finish.

Its combination of fruit, freshness and subtle herbal complexity makes it particularly versatile with food, from grilled seafood and white fish to roast chicken, creamy pasta and Mediterranean vegetable dishes.

Whether you’re preparing a leisurely Italian lunch, entertaining friends or simply looking for a fresh, characterful alternative to more familiar white grapes, Zensa Fiano delivers authentic southern Italian personality, organic credentials and exceptional everyday enjoyment.

Producer

Pronounced SENZA. The Italian definition of “without”, or “to do without”. No chemicals, no pesticides. Only what Mother Nature has given us. A range of incredibly delicious wines produced using exclusively organic grapes.

We promote biodiversity and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as providing shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally-occurring plant or mineral extracts, which leave no residues in the soil.

We also do not use any weed/killers, preferring to let the weeds grow. The weeds and grass are then mowed periodically so that the cut weeds rot back into the soil, which provides us with great organic fertiliser.

Wine Region

Salento – Puglia, Southern Italy

Puglia, also known as Apulia, forms the distinctive heel of Italy’s boot and is one of the country’s most important wine-producing regions. Surrounded by the Adriatic Sea to the east and the Ionian Sea to the west, it enjoys a warm Mediterranean climate characterised by abundant sunshine, relatively mild winters and long, dry summers.

At the southern end of Puglia lies Salento, a peninsula renowned for its historic vineyards, olive groves, limestone landscapes and deeply rooted agricultural traditions.

The region’s vineyards benefit from generous sunshine, allowing grapes to develop attractive ripeness and expressive fruit flavours. At the same time, cooling breezes from the surrounding seas help moderate temperatures and support the retention of freshness.

Salento is particularly associated with red varieties such as Primitivo and Negroamaro, but its Mediterranean conditions also provide an excellent environment for aromatic white grapes, including Fiano.

The grapes for Zensa Fiano are sourced from organically cultivated, low-yielding vineyards in southern Puglia, where the combination of sunshine, maritime influence and careful vineyard management encourages expressive fruit and balanced acidity.

Fiano is especially well suited to these conditions because it can develop generous peach and tropical-fruit character while retaining the freshness needed for a crisp, elegant white wine.

The result is a beautifully balanced expression of southern Italy, combining ripe Mediterranean fruit, delicate floral and herbal aromatics, and refreshing acidity.

Zensa Fiano offers an inviting introduction to the white wines of Puglia, demonstrating that this celebrated southern Italian region can produce wines of elegance and aromatic complexity as well as its famous rich reds.

Food Pairings

Traditional Local Puglian Pairing

  • Orecchiette alle cime di rapa – Traditional Puglian ear-shaped pasta with turnip greens

One of Puglia’s most celebrated regional dishes, orecchiette alle cime di rapa combines the region’s distinctive ear-shaped pasta with tender turnip greens, garlic, olive oil and a gentle touch of chilli. Traditional versions often include anchovies, adding a savoury depth to the dish.

Zensa Fiano is an excellent partner for this classic southern Italian speciality. Its crisp acidity refreshes the palate against the richness of the olive oil, while its ripe peach and citrus flavours balance the slightly bitter greens. The wine’s delicate herbal notes complement the vegetables and garlic, creating a beautifully harmonious Mediterranean pairing.

Other Excellent Pairings

Zensa Fiano is equally delicious with grilled king prawns, lemon-baked sea bass, crab linguine, seafood risotto, roast chicken, grilled courgettes, asparagus and creamy vegetable pasta.

For an elegant seafood supper, serve with linguine ai gamberi e limone – linguine with prawns and lemon, allowing the wine’s citrus freshness and tropical-fruit character to complement the sweetness of the prawns.

Vegetarian dishes such as courgette risotto, roasted Mediterranean vegetables and burrata with grilled peaches also work particularly well.

For cheese, try fresh burrata, mozzarella di bufala, young Pecorino or creamy goat’s cheese, where the wine’s freshness provides an appealing contrast to the richness and texture.
