In the glass, Chateau St Baillon rosé shines with a pale salmon hue. Aromas of wild strawberry, redcurrant, citrus blossom and melon rise from the glass. On the palate, it’s bone dry, with crisp acidity and flavours of raspberry, pink grapefruit, white peach and a hint of saline minerality. The mouthfeel is smooth and refreshing, leading to a clean, lively finish. A versatile rosé with a graceful, Provençal signature.

Located in the heart of the Côtes de Provence between sea and mountains, and fully classified in the Côtes de Provence (AOP) appellation, Château Saint Baillon is home to a 16th century bastide and covers 200 hectares in one piece of wooded hills and of vines. Since the Gallo-Roman period, vines and olive trees have been cultivated in Saint Baillon. Many vestiges remain from this period such as an “Oppidum” dominating the property and terraces erected by Roman slaves for the cultivation of vines.

Established at an altitude of 300m on rocky clay-limestone soil with blue marls, the terraced hillsides face south and west allowing gradual maturity of the grapes and the expression of the terroir in each of the cuvées. For the sake of quality, the harvest is done by hand. All the wines are aged and bottled at the Domaine after careful vinification and appropriate aging.
